Why is there never enough time to do what you want to do?

The days are too short and filled with obligations and chores.

I want to play. I want to relax in the shade of a forest of trees, watching as the creatures of said forest play themselves.

I want to create. I want to enjoy the creative process without feelings of criticism, mostly from myself. I want to be able to spend hours upon hours creating.

I want to read more. I want to get caught up in another world and become so familiar with the characters that I forget they’re not “real”.

I want to walk along the ocean shore on the most perfect late afternoon and hang out until sunset. And when the sun does begin to set, I want the light to play with the clouds in such a way that it creates a magical, evolving canvas of beauty.

I want to actually enjoy a thunderstorm. I want to smell the rain and feel the breeze as the storm passes through.

I want to feel alive, not just present. How do we balance our responsibilities and our desires? How can we enjoy our existence while also maintaining our financial obligations?

I want to feel alive.
Not just “be” alive.

2 years ago we rode this ferris wheel on a wonderful, relaxing day hanging out together.

Tonight we rode VIP at night and got engaged! How crazy! And wonderful.

Whew.  Today was a long day in the kitchen.  I decided last week that I would try and prep some of our dinners on Sunday as well so I had less to do during the week.  Boy…I din’t realize how much extra work that would be!!

Good thing is, everything turned out looking delicious!

I finally got around to going to one of those wine and paint places today.  I dragged along Michelle and we were determined to have a great time.

Success!!  :)  What a blast this was!  I was worried that my painting would look awful, but I think it turned out great.  Michelle’s looked awesome too!  The neatest thing about this class was that everyone was creating a similar painting, but each one looked different.  They all had a bit of the person’s personality in it which really gave each piece a unique characteristic.

I love this!  I can’t wait to do another one!  :)

Mmm…another yummy dinner without a recipe.  I love that I can just throw things together now.  It really makes me very happy.  Nights like tonight showcase how much I love to cook.

It’s easy and carefree.  And delicious!

This is what happens when you have to go out of town, but don’t want to break your healthy eating routine.  This actually made me very happy.

Also, this should be the last weekend we have to travel to Charleston for “business”.  We’re taking the last of Benny’s stuff home Saturday and will not have to go back into that apartment.  Yay!  Next time we go to Charleston it will be for fun and on our own schedule.

Avocado & Greek Yogurt Tuna Salad wrap w/ lettuce and feta cheese, side of grapes

I was amazed with how yummy this turned out.  Sure, it doesn’t taste like mayonnaise…but it’s still good!

I also decided to start a plank challenge today.  Every day starting today, I’m going to work on the plank in hopes of improving and getting stronger over time.  It starts by holding the plank position for 10 seconds and increases little by little.  Here I go building muscles and getting lean!

One thing I love about cooking with fresh fruits and veggies is how colorful everything is.  It’s hard to stop taking pictures so I can actually cook the stuff.
